Chocolate Chip Cookies
This is the cookie recipe that has been used in my family for years. It’s been a family tradition since I was a child to bake these every year on christmas eve, so that I could leave out some fresh baked cookies for santa.
Now that I’m much older I bake them for friends when they visit me and for my loving fiancé when he is having a bad day.

You will need:
- 115 grams Unsalted Butter (at room temperature)
- 45 grams Caster Sugar
- 100 grams Dark Brown Sugar
- 1 Egg
- 2.5 ml Vanilla Extract
- 175 grams Plain Flour
- 2.5 ml Bicarbonate of Soda
- 1 pinch Salt
- 175 grams Chocolate Chips
- 50 grams Walnuts (chopped)
Method:

Preheat the oven to 180°C / 350°F / Gas 4

Lightly grease two large baking trays and set them aside

Mix together the butter and sugars until light and fluffy

In another bowl, mix the egg and the vanilla essence together, then gradually beat this bit by bit into the butter mixture

Sift over the flour, bicarbonate of soda and salt and stir

Add the chocolate chips and walnuts and mix to combine well

Place heaped teaspoons of the dough 5cm/2in apart onto the baking trays

Bake in the oven for around 10 – 15 mins until lightly coloured

Take the trays out of the oven and let the cookies sit for about 5 mins
(so they do not fall apart)

Transfer to wire rack to finish cooling off
